Making Coffee with a Chemex
For best results, we strongly recommend starting with whole bean coffee and grinding with a burr grinder immediately before brewing.

What you need6 Cup Chemex, Chemex Filter, 36 Grams (5-7 tablespoons) coffee beans, 600 ml water plus more for rinsing, Pouring kettle (gooseneck preferred), Timer, Drinking Mug, Burr Grinder, Scales

Step 01
Fold the Chemex filter and insert it on top of the Chemex brewer, making sure the layer side is lined up with the pouring spout.

Heat the water to 96 degrees Celsius by bringing it to a boil and letting it sit for 30 seconds.

Pour hot water around the inside of the filter for about 5 seconds. Keeping the filter in place, discard the rinse water. Rinsing the filter with hot water helps seal it inside the dripper, gets rid of any papery taste and heats the Chemex brewer.

Weigh out 36 grams of beans. Grind them slightly finer than for filter coffee.

Pour the ground beans into the filter and gently shake the brewer back and forth to ensure that the grounds have settled.

Step 06
Start the timer and slowly pour just enough water over the grounds to wet them evenly. Let sit until timer reads 45 seconds. This step is called the ‘bloom’ – the hot water forces the coffee to release trapped gases, leading to expansion of the coffee bed, bubbling at the surface and emitting aromas of coffee.

Step 07
Begin pouring continuously in a spiralling pattern until the timer reads 2:45 seconds. If the water level nears the top of the brewer, slow down or pause for a moment. The Chemex brewer has button indicating where the 600ml mark is.

Step 08
Allow the water to drain through the coffee. Remove the filter from the brewer and discard the grinds. Pour into mugs and enjoy!

Making Coffee using an Aeropress
The AeroPress is perfect for a great cup of coffee that’s prepared relatively quickly and leaves little mess to clean up after.
What you needGrinder, 1 Aeropress Scoop 17g or 2 ½ tablespoons of coffee, Hot water just off the boil (96 degrees Celsius), Aeropress Paddle or spoon, Timer, Mug

Step 01
Measure and grind 17g of coffee (one Aeropress Spoon). Grind to the consistency of table salt.

Step 02
Get the AeroPress ready to brew by placing the filter in the basket. Next, preheat the brewer and rinse the filter with hot water. This gets rid of any paper flavor and warms everything up. Heat up your mug with hot water while you’re at it

Step 03
Discard the rinse water from your mug. Affix the basket to the bottom of the brew chamber and place it on top of the mug. If it’s handy, use the funnel that comes with the AeroPress to add 17g of coffee. Then, remove the funnel.

Step 04
Start your timer when you pour hot water (just off the boil or about 96°C) into your brewer. Saturate all the grounds within 10 seconds. Pour to the No. 4 mark or 220g of water if you’re using a scale. Spin the chamber, making sure all the coffee is saturated.

Once you hit the No. 4 mark, stir the “slurry” (coffee and water mixture) and place the plunger on the brew chamber and pull up slightly to create a pressure seal. Don’t plunge yet!

Step 06
At 1:15, remove the pressure seal and give the slurry another stir with a spoon or paddle. Put the plunger back on and gently press down with steady pressure, stopping as soon as you hear a hissing sound. This entire brew process should take just under two minutes and yield seven to eight ounces of coffee.

Step 07
The AeroPress is easy to clean. Simply take off the basket and pop out the coffee grounds and filter. Clean the rubber plunger with hot kettle water and you’re ready for your next brew.
