Ponaire Easter Coffee – Guatemalan Red Honey is grown by Felipe Contreras on his farm – Finca Gascon in the Antigua Region of Guatemala. It is a Microlot and Terroir Coffee.

When Felipe Contreras’ father set up his farm in 2012, bourbon was the first variety planted. Today, Felipe is the one in charge of the farm. Gradually, he diversified the varieties, like this Caturra. Felipe Contreras is the owner of Finca Gascon in Guatemala. Felipe is a young producer, passionate about the process and the quality of his coffees, both in the cup and for the environment. He started producing coffee at the age of 22, in 2018. And, rare enough to be highlighted, he is the 1st generation of producers in his family. At Finca Gascon, Felipe has the freedom to innovate in the way he treats his coffees. In fact, it is by experimenting that he prefers to learn how to improve the quality of his coffees each year. Despite its poor resistance to leaf rust if not cared for carefully enough, Felipe likes this variety for experimenting, thanks to the high density of its berries. It’s the ideal variety, then, for a fairly long fermentation, lasting 72 hours, to obtain beautiful, intense notes of red berries.
On the farm, Felipe is very influenced by permaculture. He aims for the most sustainable production possible, under shade and in symbiosis with his ecosystem, to produce cups with a complex profile.
To fertilize his coffee trees, Felipe produces his own biofertilizers, insecticides, and fungicides, in a completely natural and autonomous way.

  • Process
    Hand picked, wet milled with average of 30 hours fermention.  Pressure washed and patio dried for 10-12 days.
  • Cupping Notes
    Caramel, floral, brown sugar, nutmeg. Light strawberry acidity.  It has a creamy, round body with a clean caramel lingering aftertaste.
