Ponaire’s Limited Edition Speciality Coffee Selection

RWANDAN TABA AA CERTIFIED ORGANIC
Produced by Coffee Village which is driven by a philosophy based on three key areas: Quality, environment & community.
QUALITY: Selective harvesting, traceability, & process control. Coffee Village grows only the traditional bourbon variety.
TRACEABILITY: During harvesting & processing, the coffee from each plot is isolated to ensure maximum traceability. The result is reflected in the cup as each micro-lot reflects the unique characteristics of its plot (soil, shade, sunlight, etc.).
Harvesting: selective & manual, only cherries that have reached perfect maturity are picked.
Sorting: Under-ripe cherries, those damaged by insects and foreign bodies (branches, leaves, stones, etc.) are removed.
Process: Fully washed. The pulped cherries are fermented for 12 hours. They are fully washed, placed in the shade for pre-drying and then sun-dried on African beds for 21 days.
Drying: They are stirred regularly to circulate the air and ensure even drying.
Use only organic fertilisers and have started a reforestation plan, with new trees planted to limit erosion on the slopes: Planting of 20,000 agroforestry and fruit trees, Reforestation of 5,000 trees on the edges of the plantations as wind barriers, Introduced beehives to strengthen the ecosystem and ensure diversified sources of income.
COMMUNITY: Health, Education & Crafts. Tom Bagaza and his wife are heavily committed to the farmers. Projects in the Taba community include housings, medical insurance, sports education, and in December 2022, 30 goats were offered to 30 women to diversify their income (sale of milk and/or meat). A social Centre was set up to encourage development of crafts.

NICARAGUAN SINGLE ORIGIN
Ponaire Nicaraguan Single Origin is one of our customer’s favourite single origin coffees. It is strong but well balanced with low to medium acidity and sweetness.
This coffee is grown in the Matagalpa region – the most important coffee producing area in the country! It is nestled in a small valley, and as the city has grown. it has actually invaded the mountainsides. It has a lovely climate, as it sits at approximately 650 meters above sea level (about 2,150 feet above sea level).
Our Nicaragua SHG EP is a coffee that comes from the mountainous northwest region of Nicaragua. It is a Strictly High Grown coffee, meaning that the coffee was grown at high altitudes, which allows the bean to develop slower, resulting in a denser high-quality bean. In addition, EP stands for European Preparation – a further sorting of the green coffee before it is exported, so only the finest green beans are bagged and exported.

KENYAN AA ACACIAS SINGLE ORIGIN
Ponaire Kenya AA Acacias Coffee is full-bodied coffee with notes of Blackcurrant, Butterscotch, Juicy Lime
Acacias is a selection of the best coffees from across what used to be called the Central Province. Handpicked when ripe, cherry is delivered to the wet mill the same day to ensure no uncontrolled fermentation occurs, where it is sorted again and then pulped. River water is used for processing and recirculated before disposal, with the coffee being sent out to soak in tanks in what is known as the ‘Kenyan’ style – an additional 8-16 hours of soaking under clean water which helps to bring clarity to the cup and prolongs the qualities of acidity before drying under the sun. Once dried, cuppers select the specific bean size and cup attributes before bagging, or blending to ensure consistency, then passing through for the removal of parchment and bagging ready for export.

BRAZILIAN BOB-O-LINK SINGLE ORIGIN
Ponaire Brazil Bob-O-Link Coffee is grown in the heart of the Mogiana Mountains, between 1000m and 1400 of altitude. It is composed of varieties such as Yellow Bourbon, red Mondo Novo, or Catuai grow under the shade of tropical threes. Farms are managed in complete harmony with the entire ecosystem. FAF respects and protects the botanical & animal species which co-habitat on the farm. Cherries are handpicked in a selective way through different passages and only when completely ripe. The beans are dried over African beds allowing them to dry evenly.
The farm Fazenda Ambiental Fortaleza “FAF” was created in 1850 by the Baretto family. Passion for coffee has passed through the generations of the families, now the farm is managed by Silvia Baretto and her husband Marcos Croce, direct heirs of its founders. “FAF” has modernized its installations and process of production thanks to their different travels around the world which have permitted them to follow current coffee trends.
The coffee has sweet notes of chocolate, almonds and praline, and the taste is balanced with notes of red fruits and chocolate.

MEXICAN JAGUAR SINGLE ORIGIN
Again, one of our customer’s favourites, but a coffee that can be hard to source. This coffee is grown in Siltepec, located in the central part of Chiapas. This coffee comes from the high-altitude area of the Sierra Madre, bordering the biosphere reserve El Trifuno, which is the habitat of an Endemic Bird Area, “El Quetzal.” This ecological region represents 30 percent of the flora in all of Chiapas territory.
This is a single origin coffee. Flavour – Chocolate, nutty. Body – Balanced. Acidity – Malic and citric
Our El Jaguar comes from a group of small producers and is harvested and processed by hand. After harvesting it is de-pulped, fermented and washed before being dried in the sun. The Coffee Sack it is delivered in is beautiful – with a colourful picture of a Jaguar.
