Easter Coffee Colombian WINY
Easter Coffee Colombian WINY comes from the terroir of Guatica, a small town located on the mountain range of western Colombia. This region is part of the traditional coffee production belt and belongs to the PCC (Paisaje Cultural Cafetero – Coffee Cultural Landscape), a UNESCO World Heritage Site. Terroir coffees are high quality coffees from a geographically restricted production area with a unique and characteristic flavour influenced by the type of soil and local farming techniques.
Ponaire visited this farm in February 2023 and selected this Colombian WINY coffee for our Easter Coffee due to its high quality and the sustainable practices of the farmers.
Coffee production is the city’s main economic resource, the plantations are located between 1,500 and 2,000 masl with soil rich in organic matter from the western rainforest. It is one of the best preserved forests in Colombia. The winds coming from the Pacific Ocean, the tropical forest and the mild and warm climate of the valley of the Cauca river make this land a specific place.
One of the main characteristics of the region is the small size of the farms since the average rarely exceeds 3 hectares per family. The workforce is very often family-owned at all levels of production, growing, picking, process, fermentation, drying. This last step is done under ” marquesinas “, (an open-sided structure typically roofed with opaque plastic sheet), the temperature in the marquesina can often reach up to 55 degrees C, taking up to 15 days to reach the required moisture content.
The profile of this WINY coffee is one of the most balanced in Colombia. Very Fruit aroma. Low acidity and harmonious body, notes of plum, chocolate, hazelnut, and caramel.
